Taiwan Ramen
Extra-hot ramen noodles created in Nagoya which does not exist in Taiwan.
Taiwan Ramen
Despite the name, these extra-hot ramen noodles are not from Taiwan, but are a Nagoya created version of Taiwan’s Tantsu-men noodles. Red peppers and garlic are added to extra-hot fried mince, topped with leeks and bean sprouts. The soup is chicken broth based, and very refreshing. Incidentally, in Taiwan, ‘Nagoya Ramen.’ cup noodles are sold!

Origin
First made in the 70’s for the staff dinners of Nagoya’s ‘Misen’ Taiwanese restaurant. Regular customers requested it, and it soon became a regular menu item.
Availability
Becoming popular during the super spicy food boom of the 80’s, it was soon adopted by over half of the Chinese and ramen restaurants across Nagoya and Aichi. Available also as pre- packed and cup noodles at supermarkets and souvenir stands.
Taiwan Ramen
The spiciness is addictive! Many variations have emerged including the well-received Taiwan mixed soba noodles.
